Ivan Tisdall-Downes is a renowned British chef best known as the co-founder and head chef of Native, a restaurant that has gained widespread acclaim for its sustainable, wild food ethos. Ivan’s culinary journey began with a passion for sustainable and foraged ingredients, which led him to explore the UK’s natural larder. He honed his skills working in renowned kitchens, including at River Cottage and St. John, which shaped his commitment to ethical, locally sourced produce.
Together with Imogen Davis, Ivan launched Native in 2016 as a small pop-up in Neal’s Yard, London. The restaurant quickly earned a reputation for its innovative approach to British cuisine, focusing on foraged foods, rare-breed meats, and underutilised ingredients. The menu is constantly evolving, highlighting the seasonality of local produce and promoting a zero-waste philosophy.
After several relocations, Native found a new home at Borough Market and later moved to Osea Island in Essex and now can be found in the heart of Herefordshire. It remains a leader in sustainable dining, championing environmental responsibility while offering diners an adventurous culinary experience.
