Herb and Spice Seasoning Mix for Roasting Pheasants

This is an excellent seasoning for birds you wish to roast, whether on or off the bone created by Tim Maddams.

Ingredients

  Ingredients
5 x Star anise, toasted and coarsely ground
25 x Black peppercorns, toasted and coarsely ground
1 dstspn x Full of coriander seeds, toasted and coarsely ground
2 tbsp x Picked thyme leaves
2 tbsp x Picked rosemary leaves, chopped
200g x Light olive or rapeseed oil

Lightly toast

all the spices and grind them coarsely, place them in a blender with the oil and herbs and blitz for 1 minute.

This rub can

then be used to season pheasant meat a day or two before cooking.

Remember

there is no salt in this recipe (to prevent the meat curing as it marinates) so you will need to season with salt at the point of cookery.
