Ingredients
For the filling | |
x 300g | Partridge breast |
x 1 | Green chilli |
x 2 | Onions |
x 1 inch | Peeled ginger |
x 1 tsp | Soy sauce |
x 1 | Garlic clove |
x 4 | Spring onions |
For the dumplings | |
x 450g | Plain flour |
x 1 tsp | Olive oil |
Pinch of salt | |
Water as required |
Poach the partridge breasts in boiling water for 10 mins. Drain and dice.
all the vegetables and saute for 5 mins, then combine with the cooked partridge and the soy sauce.
Mix the flour, salt and olive oil, then add water a little at a time until you have a ball of smooth dough.
Roll out balls of dough into flat discs a little bigger than the size of your palm. Place a tablespoon of the filling into the middle of the dough and fold into a parcel, crimping the edges together. Repeat until all the filling is used up.
Steam the dumplings 20 minutes, and serve with chutney of your choosing!
