Ingredients

Serving 2
  For the filling
x 300g Partridge breast
x 1 Green chilli
x 2 Onions
x 1 inch Peeled ginger
x 1 tsp Soy sauce
x 1 Garlic clove
x 4 Spring onions
  For the dumplings
x 450g Plain flour
x 1 tsp Olive oil
Pinch of salt
Water as required

First

Poach the partridge breasts in boiling water for 10 mins. Drain and dice.

Finely dice

all the vegetables and saute for 5 mins, then combine with the cooked partridge and the soy sauce.

Next

Mix the flour, salt and olive oil, then add water a little at a time until you have a ball of smooth dough.

Then

Roll out balls of dough into flat discs a little bigger than the size of your palm. Place a tablespoon of the filling into the middle of the dough and fold into a parcel, crimping the edges together. Repeat until all the filling is used up.

Finally

Steam the dumplings 20 minutes, and serve with chutney of your choosing!
