Fajitas are a versatile and straightforward dish that can be prepared using various game meats. They make for an excellent midweek meal option, as they are both speedy to prepare and nutritious.

slicing and dicing your ingredients, we prefer long and thin in our fajitas but it is completely personal preference. Then start by sweating the onion until it is nice and golden.
add in the diced game, before you pop it in check that all the meat has been diced to similar sizes. Brown it all over then add in the chopped tomatoes and 1 – 2 tablespoons of the Eat Wild Mexican Spice Mix, the more you add the spicer it will be.
a further 5 – 10 minutes until the meat is cooked through and the tomatoes have softened. Add in the peppers and cook for a further 3 – 5 minutes, season to taste with salt and pepper. If you want to warm your wraps you can do so now to the instructions on the packet.
grab a wrap then first add your fajita mix followed by sour cream, guacamole, coriander and a good lashing of grated cheddar. You can also finish with a squeeze of lime. If you want to you can add jalapenos and salsa as well. This is really fun to make at the table with children as they enjoy loading up their own wraps.
